Jalapeno Apple Pancakes

- 1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 Tablespoon sugar

2 Tablespoons melted butter

1 large egg

1 cup buttermilk

1 large jalapeno pepper - diced with seeds and veins removed

1/2 cup apple - diced (Granny Smith preferred)

1/2 cup canned corn
Mix flour, baking powder, baking soda, sugar, salt, jalapeno, apple,and corn in bowl.
Beat egg and mix with melted butter and add to bowl.
Add buttermilk (1 to 1 1/3 cups) as needed. Stir just until flour is incorporated (don't over mix).
Cook on lightly buttered griddle or skillet until both sides are browned. Serve with your favorite syrup.
Combination might sound weird but try it. Everyone I've made these for has raved about them. Don't fear the jalapeno, you get the flavor but not the heat.
