Savory Eggs With Tomatoes

(2 servings)

  • 2 Tablespoons chopped onion
  • 1 teaspoon butter
  • 1 pint canned tomatoes
  • 3 Tablespoons shredded cheese
  • 3 large eggs
  • salt - to taste
  • cayenne pepper - to taste
Fry onion in butter until soft.

Add tomatoes and salt to taste.

Add cheese and dash of cayenne pepper.

Break yolks of the eggs, but do not beat.

Drop eggs on top of tomato mixture and cook covered for 1 minute.

Stir and continue to cook until eggs are done. Serve with hot buttered toast.


A real savory treat for the tomato lover who is also a breakfast lover.
