Super Hash Browns
(4 servings)
- 4 medium potatoes (microwaved for 10 minutes)

olive oil or vegetable oil

1 medium onion - diced

1/2 cup shredded cheese (your favorite)

1 medium tomato - diced

salt and pepper to taste
Allow potatoes to set until cool enough to work with. Remove the peel from the potatoes and chop into pieces (it's okay if it's kind of crumbly).
Add about 2 Tablespoons oil to fry pan and add potatoes. When potatoes are starting to brown, add onions.
During the last 2 minutes, add cheese, cook until just beginning to melt.
Remove from heat, plate and garnish with tomato. Add salt and pepper to taste.
Cheesy hash browns with onions, tomato and delicious cheese. Partially cooking the potatoes in the microwave saves time.
