Shredded Carrot Breakfast Salad

(2 servings)

  • 2 medium shredded carrots
  • 1/2 small can crushed pineapple with juice
  • A handful of raisins
  • 1/2 cup of orange juice
  • pinch cinnamon
  • pinch nutmeg
  • Approx. 1 cup old fashioned uncooked oatmeal
Mix all, stirring in enough old fashioned uncooked oatmeal to soak up the juice -- the longer it sits, the more juice the oats will absorb.


This is delicious! Top with sliced banana if desired. You can vary this using different grains (such as cooked rice, bulgur, raw millet). Use your imagination and your taste buds. Experiment!
