Peaches and Cream Omelette
(10 servings)
- 8 ounces cream cheese - softened

8 large eggs

1 pinch salt

1/4 cup heavy cream
-
1 packet sweetener
-
2 Tablespoons butter

1/3 cup stewed peaches - chopped
Combine all ingredients except butter and peaches in a bowl. Beat until smooth. Prepare omelet in a large frying pan over medium heat.
When omelet is ready to turn toward center, spoon peaches onto center for filling. Serve.
A fruit omelette? You won't know how good it is until you try it.
