Rice Griddle Cakes

- 1 cup all-purpose flour

1 and 1/2 cups rice flour

1 large egg - beaten

1 cup milk

1 Tablespoon shortening - melted

1 Tablespoon baking powder

pinch of salt
Mix together white and rice flours, baking powder and salt. Stir in milk, well beaten egg and melted shortening. Mix well. Cook on slightly greased hot griddle on both sides.
I use a heat setting of 4 out of 6 on my gas stove. Depending on my mood, I'll either use 1/4 cup batter for each pancake (which makes 5-inch pancakes) or I'll use heaping Tablespoons of batter to get silver dollar pancakes. You know to turn the pancakes when bubble start forming on the tops.
If desired, add a teaspoon of vanilla in with your wet ingredients.
This recipe uses 3 parts rice flour to 2 parts regular flour. The shortening in the ingredients can be replaced with butter if desired.
