Meat And Potato Pancake
(4 servings)
- 1 and 1/2 cups leftover meat - any kind cooked and passed through meat grinder

4 medium potatoes - peeled and grated

1 large egg - beaten

seasonings to taste

fat or butter - for frying
In a large mixing bowl, mix together the meat, potatoes, egg and seasonings.
Melt fat or butter in a large frying pan (1 or 2 Tablespoons).
Fill frying pan with the meat mixture. Bake in moderate oven for 30 minutes. This will produce a pancake the full size and shape of the frying pan.
What makes a potato pancake even better? Make it the size of a skillet and add meat, per this recipe.
