Cornmeal Pancakes II
(4 servings)
- 1 and 1/2 cups cornmeal

1 and 1/2 cups boiling water

1/4 cup milk

1 Tablespoon butter - melted

1/4 cup sugar

1/2 teaspoon salt
Mix sugar, salt and cornmeal. Add milk, boiling water and melted butter. Beat until thoroughly mixed.
Cook on greased pancake griddle set to medium-high heat. Flip when lightly brown on the bottom and then cook other side to golden brown.

This is a popular recipe at our house, just because it's so easy and uses ingredients we always have around. Top with softened butter and syrup.
