Cheesy Sausage Egg Mix (4 servings) 9 large eggs 1 pound sausage 8 ounces Velveeta cheese - diced 1/4 cup milk salt and pepper - to taste Fry sausage until done. Transfer to stacked paper towels to drain off any excess grease. In a mixing bowl, beat the eggs with the milk and any seasonings. Pour egg mixture into a greased frying pan over medium-high heat. Add sausage and cheese. Stir and scramble until egg is fully set and all of the cheese is melted. Serve hot. Velveeta is a good melting cheese that works really well in scrambles.
