Orange Juice Pancakes

(4 servings)

  • 1 cup orange juice
  • 1/2 cup unbleached flour
  • 1/2 cup whole wheat flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 Tablespoon sugar
  • 1 and 1/2 teaspoons healthy egg substitute
  • 1 Tablespoon water
  • 1 Tablespoon canola or sunflower cooking oil
  • 1 Tablespoon applesauce
Combine all the dry ingredients in one large bowl and the all wet ones (except egg substituent and water) in a smaller bowl.

In a cup, mix together the egg substitute and water, then add it to the other wet ingredients.

Add wet ingredients to to the dry ingredients and stir. Mix well. Batter will still be slightly lumpy.

Pour by 1/4 cupful onto a 375 griddle. Cook for a few minutes, then flip and cook for a few minutes on the other side. Top with syrup, powdered sugar, lemon curd or jam.

These pancakes bubble less on the griddle than regular pancakes, so watch them carefully.


This is a very flavorful pancake that's great with traditional hotcake toppings, or just a slab of "I Can't Believe It's Not Butter".
