Oatmeal Pancakes
(3 servings)
- 3 cups quick-cooking oats

1 quart soy milk soured with 1 Tablespoon lemon juice per cup

1 cup flour

2 teaspoons baking soda

2 teaspoons salt

4 eggs - beaten
Combine all ingredients. The batter will be rather thin. Cook on hot griddle (spray if desired) until golden brown.
Cooking Note:
For more flavor, add a teaspoon of vanilla and 2 Tablespoons honey or sugar to the batter. If using a very sweet topping, you don't need to add a sweet element to the batter.
A healthy serving of oats in a golden brown stack of pancakes.
