Pancake Tacos: Muy Delicioso!
It’s so simple. So easy. Why haven’t we all been doing this for years?
It’s just eggs, bacon and a pancake. The genius is in the presentation. The pancake takes the place of a taco shell. Syrup becomes your salsa. Fill the shell with goodness and there you have it. Pancake Tacos!
I got the idea from an article on LAist.com. They were talking about a food truck in Los Angeles called (no joke) The Eggslut Truck and showed a picture of their Pancake Tacos. I did a quick search and found that other people were making what they called Pancake Tacos, but it was mostly just sausage links wrapped in pancakes. They didn’t look like tacos at all.
So I set out to make my own version of a pancake taco that actually looked like a taco. I think I got it. In truth, they could look like weird piles of nonsense and they’d still be muy delicious! Very delicious!

Cool idea! I’ll be making my Pancake Taco for my kids and hubby this weekend. Maybe with sausage too. It could be a taco bar where they get to pick their favorite toppings.
