S.O.S. (Low-Fat Version)

- 6 slices healthier bread (like multi-grain or whole-wheat)
- 2 3-ounce packages dried chipped beef
- 2 and 1/2 cups milk
- 2 Tablespoons olive oil
- 2 Tablespoons flour
- 1 Tablespoon coarsly chopped fresh thyme and parsley
- salt and pepper to taste
Serve over toasted bread.
A healthy take on a classic dish. Add more flour to cooking mixture if a thicker consistency is desired.

Saute 1/2 small onion chopped, before adding the dried beef. Continue through the recipe as written, but as a last step stir in two hard boiled eggs that have been coarsely chopped. Goes from very good to awesome!
