Peachy Cinnamon Breakfast Cake

  • 1 Cinnamon Streusel Quick Bread Mix
  • 1 can sliced yellow cling peaches (original recipe calls for 8 1/4 oz - but you can double this as I do)
  • 1 large egg
  • water
Preheat oven to 400 degrees F. Grease 8 inch square pan.

Drain peaches and reserve juice. Add water if needed to reserved juice to equal 3/4 cup liquid.

Chop peaches.

Combine mix, egg, and 3/4 cup peach liquid in medium bowl.

Fold in peaches.

Pour batter in pan and sprinkle with streusel topping.

Bake at 400 degrees F for 28 to 33 minutes or until golden brown.

Best served warm, but enjoyable cool.


This is a quick and delicious coffee cake requires a box of Cinnamon Streusel Quick Bread Mix and a can of peaches.
