Easy Mexican Scramble
(1 serving) Printable Version
- 2 eggs
- 1 Tablespoon salsa
- finely diced jalapenos to taste
Pour into a pan heated at medium setting.
Cook until done to your liking.
You could sprinkle a bit of grated jalapeno jack cheese on this for a bit more kick. Diced onion and tomato are other optional ingredients.

This is too easy in my opinion. I'd suggested cooking the eggs with the pepper and then at the end topping it with shredded Cheddar or Pepper Jack cheese. And then serve them with a spoonful of salsa on the top (not cooking in). Better flavor. More interesting.

Wow, great recipe! I doubled the recipe and made 4 eggs with 2 tablespoons of salsa and half of a large jalepeno (which I must say was a bit too much for my liking) Next time, I think I'll use about half as much - I'm still sweating lol
