Vanilla Yogurt French Toast
(3 servings) Printable Version
- 6 slices bread (cinnamon raisin bread preferred)
- 1/2 cup vanilla lowfat yogurt
- 1/4 cup lowfat milk
- 2 eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- salt to taste
- 6 additional Tablespoons vanilla or berry-flavored yogurt for topping
- seasonal berrys for topping (optional)
Heat a lightly oiled skillet on medium heat.
Submerge each slice into the egg mixture, soaking both sides.
Place in pan, and cook on both sides until golden-brown. You can place completed French Toast slices on a serving plate in an oven set to 100 degrees -- to keep finished slices warm as you cook the others.
Serve each slice topped with a dollop of yogurt and sprinkled with berries.
Healthier than most French Toast recipes. You could try replacing the eggs with an egg substitute as well.

Had to guess how much 1/2 cup of yogurt was (similar to mayo, about 110g) as my yogurt was in 120g pots that I needed to use up. I used large eggs and about 3/5 cup milk. Better than my normal recipe, but tends to stick more.

It was alight. I've made better. I think it needs more milk and one more egg, personally.

Tried it using plain yogurt (didn't have any vanilla yogurt on hand) still worked. Had some home made bread. could have a used a little sugar with the plain yogurt. Will have it again.
