BBQ Breakfast Burrito

  • 1 large flour tortilla
  • 2 large eggs
  • 1 or 2 strips of bacon (or cooked ground sausage if preferred)
  • Cheddar and Monterey Jack cheese (the premixed "Mexican" variety cheese works well)
  • your favorite barbeque sauce
This recipe could change how you look at breakfast burritos. You probably didn't realize that beside the salsa in your refrigerator is another condiment that's every bit as good on a breakfast burrito. I used Hickory Smoke Barbecue Sauce from Kraft. It added a smokey flavor that paired terrifically with the bacon and the Cheddar cheese. Just be sure to use the BBQ sauce sparingly as it can dominate the other flavors if you use too much. After trying this recipe, I realistically see myself asking for BBQ sauce next time I order a breakfast burrito at a restaurant. This one is a winner. (This recipe was submitted in 2004. How To Make A BBQ Breakfast Burrito

Scramble the eggs as you like them while you are cooking the bacon or sausage. When the eggs are about done, put the tortilla on a pan and warm it for 30 seconds to a minute.

Place the eggs in the tortilla, followed by the bacon and cheese (I found that slices are the best, but use grated if slices are not available).

Lastly add the BBQ sauce to your liking. Fold and enjoy.


Making a BBQ Breakfast Burrito


Cooking Note From Mr Breakfast:

When I make breakfast burritos, I'll often brown them just a little bit after they've been rolled. Just wipe out the egg pan. Give it a light coating of cooking spray and place it over medium heat. Place the burrito in the pan seam-down. When the bottom is just lightly browned, flip it and brown the top.

This helps bring all of the flavors together and assures that the cheese gets fully melted. It's an especially useful technique if you're making more complex burritos that might cool a little as you put them together. Plus, it makes the breakfast burritos more attractive.



This may not be the most extravagant breakfast burrito, but you're sure to get a Southwest kick with very little prep time!
