Hawaiian Coconut Spread
(10 servings) Printable Version
- 8 ounces cream cheese - softened
- 2 Tablespoons apricot or peach preserves
- 1/3 cup flaked coconut
Serve on toast. Sweet fruit or nut breads work best.
It's hard to find but pinapple preserves work great too. Enjoy!

Pineapple jam is readily available here in California, so I bought some, and made this recipe. I added chopped Macadamia Nuts after it was mixed and used it to spread on zucchini bread, and, to top muffins. Quite tasty.

I made this along with our breakfast this morning. First, I lightly toasted the shredded coconut in a skillet. Then I put the cream cheese and peach preserves in a food processes and blended just until the color was light peach with chunks of peaches. Toasted the bread. Spread the mixture on the bread and then sprinkled the coconut on top. My husband loved these! He kept asking for more and ate three slices. I would like to try this with different flavors and crackers as well.
