Ham Waffles
(4 servings) Printable Version
- 2 cups flour - sifted
- 1 cup smoked Ham - uncooked and diced
- 1 and 3/4 cups milk
- 2 egg yolks - well beaten
- 2 egg whites - stiffly beaten
- 1/3 cup butter - melted
- 1 Tablespoon sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
Sift flour once, measure, add baking soda, baking powder, salt, and sugar, and sift once more.
In a separate bowl, combine egg yolks, milk, and butter. Add this mixture to the flour mixture and beat until smooth. Fold in egg whites.
Bake on a hot waffle iron. Sprinkle 1/4 cup ham over batter of each waffle just before closing iron. Makes four 4-section waffles.
Serve with soft scrambled eggs on each waffle for the perfect effect.

I actually think it's better if you fry up the diced ham just a little before adding it the waffles. It brings out more flavor.
