Pineapple Microwave Oatmeal
(2 servings) Printable Version
- 1 cup quick cooking oats
- 1 and 1/2 cups water
- 8-ounce can of crushed pineapple (don't drain)
- 1/2 cup raisins
- 2 Tablespoons brown sugar
- 1/4 teaspoon cinnamon
Stir in all remaining ingredients and microwave 45 to 60 seconds until oatmeal begins to thicken. Microwave on high for 30 to 60 seconds or until mixture begins to thicken.
Cover and and let stand a couple minutes until desired texture is reached.
A quick and easy favorite at our house.

I halved the recipe and it still would have served two!
Also, only took 3 minutes for oatmeal to boil and thicken in my microwave.
I omitted the raisins and it had okay flavor, nothing too special.
