Peanut Butter Belgium Waffles

- 2 and 1/3 Cup Bisquick or similar baking mix
- 2 or 3 Tablespoons sugar
- 1 teaspoon cinnamon
- 2 Tablespoons canola oil
- 1/4 cup peanut butter
- 1 cup soy milk
- 2 medium eggs plus one egg white
This is just "peanut-buttery" enough. Mix is nice and thick (will seep out the sides of the waffle iron a bit - but I sort of like this effect. Makes me feel like I'm making something good!)
Topping with chocolate chips and bananas is a great idea. And of course, real maple syrup. I use a 4 waffle iron, and could have gotten 6 waffles out of it, if used mix sparingly. So, serving size would be 2 to 6, depending on how many waffles, per each. I always consider 2 waffles a serving. Enjoy!
A waffle with a nice peanut butter flavor. Easy to make because it uses a store-bought baking mix.
