Banana Orange Date Oatmeal
(4 servings) Printable Version
- 1 and 1/2 cups orange juice
- 1 and 1/2 cup water
- 1/4 teaspoon salt (optional)
- 1/8 teaspoon ground nutmeg
- 1 and 1/2 cups Old Fashioned or quick cooking oats
- 3/4 cup chopped dates or raisins
- 1 medium ripe banana - mashed
Cook 1 minute for quick oats or 5 minutes for Old Fashioned oats - stirring occasionally. Stir in the banana. Let stand until you get your desired consistency - it gets thicker as it sets.
Sometimes I'll use a combination of dates, raisins and dried cranberries for a different variation.

My husband is a new diabetic and since I only wanted one serving I only used the water and not the orange juice. But if memory serves me correctly I have used orange juice before with delicious results. Thanks for this great recipe.
