Peanut Butter Banana Quesadilla

- 1/2 banana - sliced vertically
- 2 Tablespoons peanut butter
- 1 teaspoon powdered sugar (optional)
- 1/2 Tablespoon honey
- 1 warm tortilla
How To Make A Peanut Butter Banana Quesadilla
Mix peanut butter, powdered sugar (if desired) and 1/2 of the honey. Spread on half of a flour tortilla and lay banana on top. Drizzle remaining honey on top.
Fold tortilla over in half and grill or warm in a skillet or quesadilla maker until warm.
If desired, garnish with additional honey.
Cooking Notes:
Before frying my quesadilla, I folded it and then spread a very light smear of butter over the exposed half. Then I flipped the quesadilla into a hot frying pan set to medium-high. As the bottom fried to golden brown (about 40 seconds), I spread butter on the top side. I then flipped it and cooked the other side to golden brown.
The recipe suggests serving the quesadilla with additional honey. I'd skip that. The quesadilla is already sweet enough and a garnish of honey makes it difficulty to eat with your hands.
This warm quesadilla is a great way to start the morning with its sweet peanut buutter spread, banana and gooey honey!

This was SO DELICIOUS! I've made it a bajillion times in the last month! ok maybe not that many... but close! I like to leave out the powdered sugar, and add some extra crunchy granola instead. It gives it an amazing texture with the smoothness of the banana & pb. Thanks for the great recipe!
