Special K Bars
(12 servings) Printable Version
- 3 cups Special K cereal - lightly crushed
- 3/4 cup peanut butter
- 1/2 cup light Karo syrup
- 1/2 cup sugar
In a large sauce pan, mix together peanut butter, syrup and sugar. Heat on high until edge of mixture begins to boil. Remove from heat and immediately stir in cereal.
Press mixture into prepared pan and let it cool completely. Cut into 4 huge or 12 small squares and wrap in plastic wrap.
This is a great base recipe. If you want to add chocolate chips or dried fruit, just throw in a handful after you've stirred in the cereal.

Used Special K Low Fat Granola Cereal and they're great! Also cooked in microwave and was less mess!

Use splenda brown sugar and light peanut butter for a lower calorie count.

I add butterscotch chips to the peanut butter and karo syrup. The frosting I make is choc chips with a little beanut butter added.
