Potato And Bacon Cakes
(4 servings) Printable Version
- 5 slices bacon - cooked and crumbled
- 1 pound mashed potatoes (great use for left-overs)
- 2 Tablespoons all-purpose flour
- salt and pepper - to taste
- butter or olive oil for frying
Heat a griddle or large fry pan to medium-high with a generous coating of butter or oil.
Form 4 or 5 small hamburger-size patties from the potato mixture and carefully place on griddle or fry pan.
Fry the patties until golden brown on each side (about 5 minutes per side).

Wow, I love potato cakes and have never seen a recipe for them before-my mum made them for me, though we always add cheese, herbs and a dash of Worcestershire sauce and yes the egg thing too! You can put literally anything in them too, though always serve with ketcup:)

My wife insisted that I beat one egg into the mixture so it'd hold together. I'm not exactly sure the impact that made, but these turned out GREAT. Next time, I'd like to try adding some herbs too. Maybe parsley or cilantro. This is a good recipe. Thanks!
