Spicy Home Fries
(6 servings) Printable Version
- 4 large baking potatoes (like Russets) - peeled and diced
- 2 Tablespoons olive oil
- 1 teaspoon paprika
- 3/4 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon ground red pepper
- 1/8 teaspoon black pepper
- cooking spray
In a large bowl, combine all ingredients except diced potatoes and mix well. Add potatoes and stir well to coat.
Place potatoes in a single layer on a cookie sheet coated lightly with cooking spray.
Bake for 20 minutes. Stir and flip potatoes and cook for 10 more minutes until browned.
A great breakfast potato sidedish made with much less oil than homemade hash browns.
