Sweet & Spicy Bacon

- 1 1/2 tablespoons packed light brown sugar
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon black pepper
- 1 lb thick-cut bacon (about 12 slices)
Arrange bacon slices in 1 layer (not overlapping) on rack of a large broiler pan. Bake 20 minutes.
Stir together brown sugar, cayenne and black pepper in a small bowl. After baking 20 minutes, remove bacon from oven and turn slices over; sprinkle evenly with spiced sugar mixture. Continue baking until bacon is crisp and deep golden, 20-30 minutes more (check bacon every 5 minutes.) Transfer to paper towels and drain.
Be sure your bacon is thick-cut or it will burn if cooked for this long. If you only have regular packaged bacon, cook it in batches (there will likely be too much to fit on one broiler pan) and watch it closely. You'll likely have to flip it after only about 15 minutes and cook it another 10 minutes or so on the other side.
