Cinnamon Oat Pancake Mix

- 1 one-quart wide-mouth jar
- 2 cups quick cooking oats
- 1 cup all-purpose
- 1 cup whole wheat flour
- 1/2 cup dry milk
- 3 Tablespoons sugar
- 1 Tablespoons cinnamon
- 2 teaspoons salt
- 1 and 1/2 Tablespoons baking powder
- 1/8 teaspoon cream of tartar
Seal the jar.
To Prepare:

Cinnamon Oat Pancakes
(Approximately 24 five-inch pancakes)
To make 12 pancakes:
Heat a large frying pan or skillet to medium-high heat. Grease the surface with a thin coating of cooking spray. Dollop the batter in 1/4 cup amounts per pancake. Cook until bubbles appear on surface and the edges are dry (about 2 or 3 minutes). Flip and cook 2 to 3 minutes until golden brown.
Serve with butter and maple syrup. Enjoy!

- 1/3 cup vegetable or canola oil
- 1 cup water

If there's 4 cups + about 6 Tablespoons of mix in the jar, and the recipe requires 2 cups of mix, it seems like a person would be left with a bit of mix in the jar at the end, after making the recipe twice. Would the proportions be just fine if the recipe was to use half the jar, which I guess would be about 2 1/4 cups?
