Ginger Snap Granola

- 2 and 1/2 cups Oat Squares breakfast cereal (Oat Bran or Oat Chex also work)
- 2 cups oats - quick or Old Fashioned
- 3 Tablespoons butter or margarine
- 1/2 cup honey
- 2 Tablespoons molasses
- 2 teaspoons grated lemon peel
- 1 teaspoon vanilla
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 pinch grated nutmeg
Prepare a 15" x 10" (or similar) rimmed baking sheet by spraying with a thin coating of cooking spray.
In a small sauce pan set to medium low heat, combine the butter (or margarine), honey, molasses, lemon peel, vanilla and remaining spices. Cook - stirring often - until well combined and smooth.
Mix the breakfast cereal and (uncooked) oats together in a large bowl.
Drizzle with hot mixture and stir gently to coat evenly.
Spread the compiled mixture on the prepared baking sheet.
Bake 25 to 30 minutes until golden brown - stirring every 10 minutes.
*Begin checking the granola after 20 minutes so it doesn't burn.
Granola with a festive flavor. This stores well in a sealed container for about 2 weeks.

The cereal and the lemon zest add a nice touch. Almost more of a party mix than a granola. Thumbs up from our house.

This is a great cereal. My kids love it, my husband loves it, my mom loves it. Some of us eat it plain, others mix it with regular home made granola. I love having a healthy and filling breakfast for them. I double the batch, or it's gone too quickly. Thanks for such a great recipe.
