Multi-Grain Raisin Nut Cereal

Multi-Grain Raisin Nut Cereal

(12 servings)    Printable Version
  • 1/2 cup pure maple syrup
  • 1/3 cup honey
  • 3 Tablespoons canola oil
  • 1 and 1/4 Tablespoons vanilla extract
  • 4 and 1/2 cups quick-cooking or old fashioned oats
  • 1 cup quick-cooking barley
  • 3/4 cup chopped walnuts (or pecans)
  • 1/2 cup wheat germ
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 7-ounce package raisins (or chopped dried fruit of choice)
Preheat oven to 325 degrees.

Prepare a large jelly-roll pan with a light coating of cooking spray.

In a sauce pan over low heat, combine the maple syrup, honey, oil and vanilla. Stir until well combined and warm. Remove from heat.

In a large bowl, mix together all other ingredients - EXCEPT for the raisins (or dried fruit). Add the warm mixture and stir until all ingredients are well-coated.

Spread mixture evenly over the prepared pan.

Bake for 30 minutes or until nicely browned. Remove from oven and stir in the raisins.

Allow cereal to cool completely before serving or storing. Cereal stores well in an air-tight container for up to two weeks.

Tastier, healthier and cheaper than similar store-bought cereals.

I made our first batch of this last week and it was DELICIOUS! We ate it sprinkled over Greek yogurt and also just in a bowl with milk. My children loved it, too! I will never buy a box of cereal from the grocery store again. THANKS so much for sharing this recipe! BTW, we did not cook the barley beforehand.

I don't have a comment yet, but I do have a question. Do you cook the barley first or use it raw?
