Baked Breakfast Rice

- 3 cups boiling water
- 1 1/2 cups brown rice
- 1/2 cup raisins or dried cranberries
- 1/4 to 1/3 cup ground flax meal (optional)
- 1 Tablespoon sesame seeds
- 1 teaspoon cinnamon
- 1/4 teaspoon allspice or nutmeg
- 1/2 teaspoon or more salt
Heat water to boiling in kettle or sauce pan. Measure rice into 8x8 square glass dish and combine with remaining ingredients.
Pour boiling water into dish and stir several times. Seal tightly with tinfoil, preferably using two layers.
Bake in oven for 1 hour. Remove, allow to stand, covered, at least five minutes.
(If you desire a softer texture: Stir to loosen grains, add an additional couple cups of boiling water, and return to oven for another 45 minutes or so.)
Great for those who have dietary restrictions and need their breakfast to be gluten-free, wheat-free, and corn-free.
