Peanut Butter Banana Streusel Muffins

- 1 cup all-purpose flour
- 3/4 cup quick cooking oats
- 1 Tablespoon baking powder
- 1/3 cup packed brown sugar
- 3/4 cup milk
- 1/2 cup peanut butter
- 1/2 cup mashed ripe banana (2 over-ripe bananas)
- 1 large egg - beaten
- 1/4 cup butter - melted and cooled
- 2 Tablespoons vegetable oil
- 1 teaspoon vanilla extract

1/3 cup mini-chocolate chips - optional
- Streusel Topping:
- 1/3 cup all-purpose flour
- 1/4 cup butter (melted)
- 1/4 cup packed brown sugar
- 2 Tablespoons quick cooking oats
How To Make Peanut Butter Banana Streusel Muffins
Preheat oven to 375 degrees F (190 degrees C). Grease 12 muffin cups or line with paper muffin liners.
In a large bowl, mix together the flour, oats and baking powder.
In a separate medium bowl, beat together the brown sugar, milk, peanut butter, mashed banana, egg, butter, oil and vanilla.
Add the wet ingredients to the dry ingredients and mix just until the dry ingredients are moistened. Fold in chocolate chips if using.
Fill prepared muffin cups 3/4 full.
In a small bowl, stir together all of the ingredients for the streusel topping. Sprinkle topping evenly over muffins.
Bake in preheated oven for 18 to 20 minutes, until golden brown.
Cooking Note From Mr Breakfast:
For me, there was enough batter left over to make 2 extra muffins. I decided to use that batter to make one 3 x 3-inch coffee cake which took 30 minutes to bake.
The peanut butter adds a nutty deliciousness and the streusel topping makes your homemade muffin seem like a $3.00 coffeehouse muffin.

Delicious! I substituted half the four with whole wheat flour and everyone loved it. Thanks for the recipe.
