Maple Bacon Waffles

- 8 slices of bacon - cooked and crumbled
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 3/4 teaspoon salt
- 1 and 1/3 cups milk
- 2 large eggs - lightly beaten
- 2 Tablespoons pure maple syrup
- 2 Tablespoons butter - melted
Preheat your waffle iron.
In a large bowl, mix together the flour, baking powder and salt.
In a separate smaller bowl, beat together the milk, eggs, syrup and butter.
Add the wet ingredients to the dry ingredients and mix until until just-combined.
Dollop batter onto waffle maker in approximately 1/3 cup amounts. Sprinkle each waffle with 1/8 of the bacon crumbles. Close the lid and cook according to the instructions for your waffle iron.
To keep finished waffles warm as you make more, place them on a cookie sheet in the oven set to 200 degrees.
Serve waffles warm with softened butter and warm maple syrup.
This waffle has a great unique combination of flavors. The sweetness of maple syrup mixed with the heartier somewhat-salty flavor of the bacon is divine.

I sprinkled brown sugar on my bacon and cooked it in the oven until it was crisp. This was a sweet & delicious treat inside the waffles!

Great recipe. Instead of pure maple, I used table syrup, so next time I'll try to add a little more sugar, but overall really good.
