Perfect Sausage Gravy (for biscuits)

  • 1 pound sage breakfast sausage
  • 1 (10-16 oz) package of bacon
  • 1/2 cup flour
  • 4 cups half & half or cream
  • pinch of dried sage (or fresh chopped sage)
  • 1/2 teaspoon salt
  • 4-5 dashes of tabasco sauce (optional)
First, brown bacon until crisp. Crumble bacon and set aside. Drain bacon grease and set aside. Second, brown the sausage, breaking it up into crumbles. Add 2 Tablespoons of the bacon grease and stir in the flour until a paste forms. Slowly add the half & half or cream, 1 cup at a time, stirring well to combine each time so no lumps form. Add crumbled bacon, sage, salt and tabasco and continue to simmer for 5 minutes or until well thickened.

Serve hot over fresh baked biscuits.


This is a very rich dish that works well on its own, or with some scrambled eggs on the side. Add more milk if made in advance and reheating.

This is a GREAT biscuits and gravy recipe. The bacon is a great touch to the flavor. My whole family loved it, even my picky son. The bacon did get soft again after being in the gravy a bit, so next time I will simply spread a decent portion over the top of the gravy when ready to serve, instead of stirring in. My preference is for crispy bacon, so this is absolutely no fault of the recipe. AWESOME!
