Tex-Mex Migas

  • 8 large eggs
  • 2 Tablespoons milk
  • 2 Tablespoons of your favorite salsa
  • 2 Tablespoons vegetable or canola oil
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped onion
  • 1 small jalapeno pepper - minced
  • 1/2 cup crumbled corn chips
  • 6 ounces Cheddar cheese - grated
  • warm flour tortillas - for serving
  • additional salsa - for serving
In a medium bowl, beat the eggs with the milk.

In a large skillet over medium heat, warm the oil. Add the red bell pepper, onion and jalapeno pepper and saute until tender. Pour the egg mixture over the sauteed vegetables. When the eggs begin to set, start scrambling by pushing the set portion of egg toward the center allowing uncooked egg to distribute over the pan.

When the egg is almost completely set, add the corn chip pieces. Stir everything together - breaking up large pieces of egg - and continue to cook and scramble for one minute. Remove from heat and stir in the cheese.

Once the cheese is melted, serve immediately with warm tortillas and additional salsa to taste.


The recipe is easily modified. You might want to add cooked and crumbled bacon or sausage to the mix at the same time you add the corn chips.
