Easy Date & Nut Bread

- 1 cup of boiling water
- 1 8-ounce package of dates - cut into small pieces
- 1 teaspoon baking soda
- 1 cup sugar
- 1 4-ounce stick of butter - melted
- 2 large eggs
- 2 cups all-purpose flour - sifted
- 1 cup walnuts - chopped
In a large mixing bowl, pour the boiling water over the dates. Add baking soda, stir and let set for 5 minutes.
Preheat oven to 375 degrees. Prepare a loaf pan with a generous coating of cooking spray.
Add all remaining ingredients to the mixing bowl and mix well. Transfer batter to loaf pan and bake for 45 minutes until golden brown and a toothpick or knife inserted into the center comes out clean.
This easy-to-make bread is so good served warm with a pat of butter and strawberry jam.
