Grape-Nuts Waffles

- 1 and 1/2 cups sifted flour
- 2 teaspoons Calumet Baking Powder
- 1/2 teaspoon salt
- 1 Tablespoon sugar
- 1/2 cup Grape-Nuts
- 2 egg yolks - well beaten
- 1 and 1/2 cups milk
- 2 Tablespoons melted butter
- 2 egg whites - stiffly beaten
- 1/2 cups additional Grape-Nuts
Combine egg yolks, milk, and butter; add to flour mixture, beating only until smooth. Fold in egg whites.
Bake in hot waffle iron, sprinkling each waffle with about 2 Tablespoons Grape-Nuts just before closing iron.
Serve with Log Cabin syrup or with mushrooms, sauteed and heated in light cream. Makes four 4-section waffles.

According to a note from Kate Smith in the Griddle Specialties section of her Breakfast Book, "Waffles and pancakes made with Calumet Baking Powder can be made the day before and then stored in your refrigerator. Just cover the bowl of batter well."

We liked them. They have a little bit of crunch and a nice flavor. We even used extra Grape-Nuts to sprinkle on top at the end.
