Easy Spicy Tofu Scramble
(2 servings) Printable Version
- 1/2 small red onion - chopped
- 3/4 cup medium or hot salsa
- 1 12-ounce package extra firm tofu - drained and sliced into 1-inch cubes
- 1/2 teaspoon turmeric
- salt and pepper - to taste
- olive oil - for frying (about 2 Tablespoons)
In a medium bowl, toss together the salsa, tofu and seasonings. The tofu should crumble as you mix.
Pour the tofu mixture into the skillet with the onion. Stir immediately to incorporate the onion into the tofu mixture. Continue cooking - stirring (or scrambling) often - for 5 to 10 minutes until the tofu is browned to your liking.
Serve warm with toast or tortillas.
Recipe tested and photographed in November 2013.
You cold also add chopped peppers or mushrooms... whatever you like. But this is the version I usually make. The whole thing takes about 15 minutes.

I worked out this recipe too on my own and it turned out very well. I also tried scrambling in eggs in the end so that they coat the tofu and the end result is a light and fluffy scramble.
