Pineapple Bran Muffins

- 1/2 cup rolled oats
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1/2 cup All-Bran cereal
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 large egg - beaten
- 1/4 cup canola oil
- 1/2 cup molasses
- 3/4 cup buttermilk
- 1 can (8 oz) crushed pineapple in natural juices - undrained
- 1/2 cup walnuts - chopped
Combine the first 7 ingredients in a bowl (all the dry ingredients) in a bowl. Combine the egg, oil, molasses, buttermilk and pineapple. Make a well in the center of the dry ingredients, and pour the wet mixture in the well. Mix until well moistened.
Fill the muffin cups two-thirds full with batter. Bake at 400 degrees for 12 minutes until golden brown. Serve warm.
With these muffins, you get fiber and whole grains from oats, wheat flour and the secret ingredient, All-Bran breakfast cereal. Flavor from pineapple and walnuts makes you forget this is healthy.
