Sweet Potato Pancakes II
(6 servings) Printable Version
- 2 cups Bisquick or other all-purpose baking mix
- 1 and 1/4 cup buttermilk
- 1 cup mashed sweet potatoes
- 2 large eggs - beaten
- 1/8 teaspoon ground cinnamon
- 1 pinch salt
Heat griddle or fry pan to medium-high. Coat generously with cooking spray.
Dollop batter in 1/4 cup amounts for each pancake. Cook until the tops begin to bubble. Flip pancakes and cook the other side to golden brown.
Serve immediately with softened butter and warm maple syrup.
Low-fat Bisquick works fine. You can also replace the buttermilk with low-fat milk. Not quite as good, but still very tasty.
