Ofe Akwu (Africa)

- 1 kg ripe palm nut
- 2 cubes of maggi
- 2 Tablespoons of salt
- scent leaves
- 3 spoonfuls of ground crayfish
- small portion of smoked fish
- beef of bacon (if needed)
- 1 Tablespoon red pepper (okpenyi)
Sieve out water from pot containing palm nut and pound palm nut, making sure the nut is not broken but extracting the shaft to get enough syrup from the pound.
Pour the syrup in a pot. Add crayfish, salt, pepper, maggi, washed smoked fish, grounded okpenyi and steamed meat.
Put the pot on fire, add sliced scent leaf in pot, and allow the mixture to boil for 10 minutes.
There after the food is ready to be served with white boiled rice.
This is a Nigerian local stew - highly nutritious. "Ofe Akwu" translates roughly to "Palm Fruit Stew".
