Roasted Oatmeal & Date Bread

- 1 cup all-purpose flour
- 1/4 cup roasted oatmeal
- 2 large eggs
- 1 cup sugar
- 1/3 teaspoon salt
- 1 teaspoon baking soda
- 1/2 cup chopped dates
- 8 Tablespoons butter
In a separate large bowl, beat the butter and sugar until creamy, add the egg and beat slowly, add the flour mixture and roasted oatmeal slowly. Fold in the dates.
Pour batter into greased baking mold and bake at 350 degrees for 30 to 45 minutes - until a toothpick inserted into the bread comes out clean.
An easy quick bread with roasted (or toasted) oatmeal mixes with chopped dates. For decoration, I'll sometimes sprinkle a couple oats on top of the bread midway through cooking.
