Apple Flax Pancake
(1 serving) Printable Version
- 1 egg
- 1 Tablespoon plain yogurt
- a few drops stevia sweetener
- 1/4 teaspoon vanilla
- 2 Tablespoons flax meal (ground flax seeds)
- 1/3 apple - chopped into 1/4-inch or smaller pieces (you can also use roughly mashed bananas or blueberries)
- sprinkle of cinnamon and/or other spices as desired
Pour batter into bottom of small skillet and cook a few minutes on each side, until nicely browned.
Serve spread with natural peanut butter (my personal favorite), or some yogurt and fruit together!
This pancake may be low carb, but it is definitely NOT low on flavor! This is probably my favorite breakfast food EVER!

I used the runny batter and the pancakes firmed up in the pan. They are not your typical pancake, but they are really good with no flour!

The recipe sounds great but the batter wasn't thick enough. I had to add more wheat flower.

This recipe is wonderful. Another type of flour needs to be used. The flax seed meal will not thicken alone. I used 1/2 cup of vanilla whey powder as a thickening agent. The flavor is wonderful, and the whey powder gives an added protein! Enjoy these flavorful pancakes!

Wouldn't form solid until I added some organic buckwheat flour.
