Yankee Egg White Omelet

  • 1/4 cup finely chopped green pepper
  • 1/2 red pepper - finely chopped
  • 1/4 large onion - chopped
  • 6 egg whites - beaten
  • 1 Tablespoon grated cheddar (or your favorite Cheese)
  • hot sauce - to taste
  • Cajun seasoning - to taste
  • Worcestershire sauce - to taste
  • olive oil - for frying
Place a frying pan over medium-high heat. Add just enough olive oil to lightly coat the bottom of the pan (tilt and swirl the pan to coat).

Add the green and pepper and onion to the frying pan. Saute - stirring occasionally - for 4 or 5 minutes until vegetables soften.

Transfer sauteed vegetables to a temporary bowl. Wipe any residue from the pan with a paper towel. Return the pan to medium-high heat.

Pour beaten egg whites into the pan. Tilt and swirl the pan to distribute the egg.

Once the egg in almost completely set, spoon the sauteed vegetables over one side of the egg. Sprinkle cheese and, if desired, hot sauce on top of the vegetables. Fold the omelet.

Transfer to a serving platter. Season with Cajun seasoning and a dash of Worcestershire sauce.

Very good, but be careful of using to much Worcestershire sauce. I used just 1/4 teaspoon and my omelet was very salty. Next time, I'd just add like 2 drops.

OMG. Don't throw away the yolk! It's a myth that it is unhealthy.

I make and eat omelettes every day and I'm feeling fine, I was never sick and I'm still as thin as I was 2 years ago (relating to yolk's calories).

btw. there is no point in frying vegetables - they only loose their healthy properties and you smudge another pan without a reason. and use more than just peppers, there are a lot of more tastier vegetables.

Keep pumping the iron ;-)
