Mix everything together well. Prepare your griddle with a thin swipe of margarine or spray of cooking oil. Make pancakes in the size you like. Top with butter and orange marmalade.


The sauce is just orange marmalade. But hey... if it works, I ain't gonna fix it. Mmmmmm Mmmmmm.

Do you beat the whites first? Is this pancake mix one that requires the addition of eggs or does it already have it in the mix?

I replaced the amount of water requested by the pancake mix with 1/2 orange juice and 1/2 milk. Also... I think it's very important to fold the egg whites in to the batter just before cooking. Very tasty and light pancakes.
