Pancake Corn Fritters
(6 servings) Printable Version
- 1 egg
- 1/4 cup milk
- 1 cup pancake mix
- 1 12-ounce can whole kernel corn - drained
Fluffy fritters need a light hand so don't over-beat.
Drop by teaspoonfuls into hot Wesson Oil* (1 inch deep) and cook slowly until golden brown, about 4 minutes.
Makes 20 to 24 fritters.
Serve hot with lots of Log Cabin Syrup.
*Any vegetable oil or canola oil will work.
An easy 4-ingredient recipe from a vintage ad for Wesson Oil. As the ad states: Smoke's out, flavor's in these glorious fritters. Delicate Wesson Oil fries them ever so lightly...

My mom used creamed corn to make the fritters sweeter. Loved it when she made them.

Just like my mother used to make. It took me back to my childhood in the 50's.

That's funny. Sort of like Corn Donuts. Doesn't work with my diet, but I love when you post to vintage recipes.

Is there any way to make this without so much oil? I wish you could bake it. Looks delicious but I'm watching my weight.
