Weenies And Taters
(4 servings) Printable Version
- 3 medium russet potatoes
- 6 beef franks
- 2 cans El Pato hot tomato sauce (little yellow cans)
- cilantro - chopped
- olive oil
- 2 poached eggs - optional
- flour tortillas - optional
When potatoes are finished baking cut into large dice.
Heat 12-inch deep fry pan and pour in enough oil to lightly coat bottom.
Fry potatoes until slightly crisp.
Slice franks and add to potatoes, cook until franks are well toasted.
Add two cans of El Pato sauce.
Cook for about five minutes. Add 1 El Pato can of water (about 7 ounces).
Sprinkle with cilantro.
Serve with two poached eggs on top and heated tortillas to slurp up sauce.
My wife can't cook but I'll be danged if I don't eat this stuff every weekend.
