Strawberry Jam Coffee Cake

- 2 cups all-purpose flour
- 1/2 cup sugar
- 1 Tablespoon baking powder
- 1/2 teaspoon salt
- 6 Tablespoons butter - softened
- 1 large egg - beaten
- 3/4 cup + 1 Tablespoon milk
- 1 teaspoon vanilla

1 cup strawberry jam
- For The Topping:
- 2/3 cup brown sugar - packed
- 2 Tablespoons all-purpose flour
- 2 Tablespoons butter - softened
How To Make A Strawberry Jam Coffee Cake
Preheat oven to 400 degrees. Prepare a 9-inch square baking pan or two 8 inch round pans by coating the inside generously with butter.
Into a large bowl, sift together the flour, baking powder, and salt.
In a separate medium bowl, cream together the butter and sugar. Add the beaten egg, milk and vanilla and stir to combine.
Add the wet ingredients to the dry ingredients and mix until just combined and moistened. (The batter may seem too thick, but it will thin when the jam is added.)
Transfer batter to prepared pan. Dollop the jam on top and swirl it into the batter using the tip of knife.
In a small bowl, mix the topping ingredients together with a fork until crumbly. Sprinkle topping evenly over the coffee cake.
Bake at 400 degrees for 25 to 30 minutes or until a toothpick inserted in the center comes out clean (no batter sticking to it).
This recipe is for a strawberry coffee cake, but you could use any flavor jam that you like.

I have just made this. It's being served warm at a parent & toddler group session. On slicing, I thought it was a bit wet however as it cooled it seemed to firm up a bit. I would reduce the amount of jam - but this could be my fault as converting from American measurements to UK. Will definitely use this recipe again and the 'little taster' that has been scoffed by the staff went down very well.

The cake turned out to be like a biscuit mix because of the lack of liquid... good but needs improvement. I'll tweak this and post again later.

Just a quick thanks! It turned out perfect. This is my new go-to coffee cake recipe. I got lots of compliments and it was easy to make. All around awesome!
