No-Bake Chocolate Chip Breakfast Bars
(10 servings) Printable Version
- 1 and 1/3 cups quick-cooking oats
- 1 and 1/4 cups Rice Krispies or similar crispy rice cereal
- 1/3 cup mini chocolate chips
- 1/3 cup light brown sugar - packed
- 5 Tablespoons butter
- 1/3 cup honey
- 1/2 teaspoon vanilla
In a large bowl, mix together the oats and Rice Krispies.
In a small saucepan over medium heat, melt the butter. Just as the last bit is melting, stir in the brown sugar and honey. Increase heat to medium-high and bring mixture to a gentle boil. Turn heat to low, stir and cook for 2 more minutes. Remove from heat and stir in vanilla.
Pour the liquid mixture into bowl of cereal and oats. Stir until the dry ingredients are moistened and well combined.
Transfer to prepared baking dish and press down to a compact even layer. Sprinkle the chocolate chips on top and then press them lightly into the bars.
Let set at room temperature for 2 hours. Cut into bars. Makes 10 to 16 servings depending how large you make the bars.
Stores well in an airtight container for up to 8 days.
There's no excuse to skip breakfast when you have these easy-to-make, delicious cereal bars on hand.

My daughter is a competitive swimmer and she loves to have these made to take along to practice. She has added dried fruits, nuts and seeds. They are tasty and we know exactly what is in each bar;-).

I've made these for the second time. The first time, they were very popular where I work. This time, I added toasted slivered almonds, and toasted coconut. Delicious! Somewhat healthier than Rice Krispy treats!
