Maple Raisin Steel Cut Oatmeal

- 1 cup steel cut oats
- 1 and 1/2 cups milk
- 1 and 1/2 cups water
- 1/4 teaspoon salt
- 1/4 cup maple syrup (preferably pure maple syrup). 1/3 cup raisins
- butter - if desired
- chopped walnuts (or other chopped nut) - if desired
In a medium sauce pan over high-heat, bring the water, milk and salt to boil. Stir in the oats. As soon as the water begins to boil again, reduce the heat to a low simmer.
Cook, stirring occasionally, for 15 to 20 minutes or until desired consistency is reached.
Stir in the syrup and raisins. Turn of heat, cover and let set for 5 minutes before serving.
Top each serving with a pat of butter and/or a few chopped nuts for a pretty and tasty final touch.
Cooking Notes:
Any dried fruit can be used in place of the raisins. Cranberries and dates work great. Just let them set in the oatmeal for a few minutes to rehydrate a bit.
Fresh fruit can also replaced the raisins. A chopped banana or a chopped apple both taste great. Again, just be sure to let your fruit of choice set within the oatmeal for a short while so the flavors intermingle.
Brown sugar can be used in place of the maple syrup, but use a little less - maybe 3 Tablespoons.
A creamy, tasty steel cut oatmeal with just the slightest little pop from each tiny oat. Easily modified to fit your tastes.

Tip: Look for Steel Cut Oats in the bulk section of your grocery store if they have one. At my local store, they're 1/4 the price of Steel Cut Oats in packages like the ones from McCann's or Bob's Red Mill.
